Mokolo ya Sombe
Cassava leaf pounded and cooked, similar to pondu but distinct. In the Kongo tradition, sombe is prepared with palm oil and smoked fish and served with fufu. The grinding of the leaves, the slow cooking, the flavor that fills the whole house. Every Kongo mama knows that sombe is not pondu, and she will tell you why.
