Angel food cake is made with egg whites, sugar, and flour. No butter. No yolks. It is the lightest cake in America, and it is the only cake that is baked in an ungreased pan so it can climb the walls. In the South, angel food cake is served at funerals, because it is white and light and the opposite of grief.
