Celebrated with particular devotion in Panama's Catholic communities. Families named Jose or Josefina host open houses with traditional foods including tamales de maiz and arroz con pollo. In the Embera communities of the Darien region, the day coincides with preparations for the rainy season, when the rivers swell and the rainiest place on earth lives up to its name.
