Mokolo ya Makala
The charcoal bread of Kinshasa, baked in charcoal ovens and sold on every street corner before dawn. Makala is crusty on the outside, soft inside, and costs almost nothing. Every Kinois has walked to the corner at 5 AM with coins in hand to buy makala warm from the oven. It is not breakfast, it is survival with dignity.
