Mawsim al-Maqbuda

Maqbuda is a Libyan dish of lamb offal (liver, heart, and kidneys) cooked with onions, tomatoes, and spices, and served with bread or rice. The dish is a specialty of the eastern region (Cyrenaica), and it is served at weddings, Eid, and every important gathering. The preparation is a communal event: the men slaughter the sheep, the women clean and cook the offal, and the children play around the fire. The maqbuda is not for the faint of heart (it is rich, gamey, and intensely flavored), but it is one of the most authentic expressions of Libyan cuisine. . 2026: Apr 5. 2027: Mar 28.
