Jour du Mbisi

Fresh fish from the Congo River, from the Pool Malebo, from every stream and pond. Mbisi ya mai (freshwater fish) is grilled over charcoal and eaten with the fingers. The best mbisi comes from the river at dawn, when the fishermen return with their nets and the market women are already waiting. Capitaine, mpuya, muke. Every fish has a name and every name has a sauce.
