In the North End of Boston, in Little Italy in New York, in every Italian neighborhood in America, pasta is not a side dish. It is the meal. Sunday gravy (not sauce, gravy) simmers all day. The meatballs go in the gravy. The pasta goes on the plate. The gravy goes on the pasta. The grated cheese goes on top. This is not negotiable.
