Courir de Mardi Gras Tradition
In rural Cajun country, the celebration looks nothing like Bourbon Street. Masked riders on horseback travel between farms collecting ingredients for a communal gumbo. They chase chickens. They beg for rice. They sing in Cajun French. The capitaine leads them with a whip. The tradition dates to medieval France and has been practiced in Louisiana since the 18th century.
