Egusi soup, made from ground melon seeds, is the companion to every plate of fufu in Togo. The seeds are toasted, ground with onions and peppers, and simmered with palm oil, tomatoes, dried fish, and leafy greens until the soup is thick enough to coat the fufu on contact.
