Grilled fish on the beaches of Lomé, seasoned with a marinade of onion, tomato, chili, and local herbs, then cooked over open charcoal. The fisherman catches it in the morning, the vendor grills it at noon, and you eat it with your fingers by the ocean. Akassa or fufu on the side, a cold drink, and sand between your toes. This is not restaurant food. This is beach food, and it is the best thing you will eat in Togo, which is saying something because Togolese cooking does not miss.
