Egusi soup, made from ground melon seeds, is the companion to every plate of fufu in Togo. The seeds are toasted, ground with onions and peppers, and simmered with palm oil, tomatoes, dried fish, and leafy greens until the soup is thick enough to coat the fufu on contact. Every cook has their own ratio of egusi to pepper to palm oil, and every cook insists theirs is the best. The soup is rich, nutty, and deeply satisfying, and without it, fufu is just a ball of starch waiting for a reason to exist.
