Fufu is not just food in Togo. It is the national dish, the cultural institution, and the answer to every question about what to eat. Made from cassava or yam that is boiled and pounded into a smooth, elastic dough, fufu is eaten with the right hand, rolled into a ball, and dipped into egusi soup, palm nut soup, or tomato sauce. A meal without fufu is not a meal. The saying goes: "If you have not eaten fufu, you have not eaten." The pounding rhythm that echoes from compound to compound at midday is the heartbeat of Togo.
