The eve of St. Martin's Day is celebrated with a feast of goose in Skane, the southernmost province. The tradition dates to the 16th century, when the goose was eaten to mark the end of the autumn hiring season, when farmworkers moved to new employers. The goose is served with apple stuffing, prune sauce, and potato dumplings.
