A celebration of the bouye drink, made from the fruit of the baobab tree, which is sold on every street corner in Dakar and throughout Senegal. The baobab, called buuri in Wolof, is called the tree of life because every part is used: the fruit for bouye, the leaves for cooking, the bark for rope and medicine, and the hollow trunk for shelter. The drink itself is tart, creamy, and uniquely refreshing, often spiced with ginger or vanilla.
