Ignatul

The day before Christmas is the traditional day for slaughtering the pig, and it is the most important food preparation day in the Romanian calendar. The tradition is for the men to slaughter the pig, and for the women to prepare the meat (sausages, ham, bacon, and piftie : a meat jelly). The Ignatul is not just a food preparation day : it is a social event, and the tradition is to invite the neighbors, share the meat, and drink tuica (plum brandy). The pig is slaughtered early in the morning, and the tradition is to make "sorici" (pork rind) from the skin, "caltabos" (liver sausage) from the organs, and "tobă" (head cheese) from the head. Nothing is wasted : the Romanians use every part of the pig, and the tradition is to say: "Porcul e o comme il faut" (The pig is a true gentleman : everything about him is useful).
