Wigilia
The most important night in the Polish calendar, celebrated with a family dinner that includes 12 dishes (one for each apostle). The dinner begins with the sharing of the oplatek (a thin wafer that is broken and shared with every member of the family), and the tradition is to leave an empty chair at the table for an unexpected guest. The oplatek is not just a wafer: it is a symbol of unity, and the tradition is to wish every member of your family health, happiness, and peace for the coming year. The Wigilia is the most emotional night of the year, and the tradition is to forgive all grievances, reconcile with your enemies, and start the new year with a clean slate. No meat is eaten on Wigilia; the meal is entirely fish, vegetables, and grain.
