Suya Night

The suya is the national street food of Nigeria, and it is a spicy skewered meat (beef, chicken, or goat) that is grilled over charcoal and served with onions, tomatoes, and yaji (a spice mix of ground peanuts, chili, and ginger). The suya is sold at stalls on every street corner, and the best suya is found at the suya spots in Lagos, Abuja, and Kano. The suya is not just food. It is a cultural institution, and the tradition is to eat it standing up, with your hands, and to wash it down with a cold drink. The suya spice mix yaji is a closely guarded secret, and every mai suya (suya seller) has his own recipe.
