The autumn equinox marks the beginning of the mushroom season in the Netherlands, and the Dutch tradition of mushroom picking (paddestoelen zoeken) is popular in the forests of the Veluwe and the dunes of the North Sea coast. The Netherlands has over 4,000 species of mushrooms, and the chanterelle (hanenkam) is the most popular edible mushroom. The autumn equinox also marks the beginning of the stampot season, when the Dutch eat their traditional stew of mashed potatoes with vegetables. The most popular stampot is boerenkool (kale stew with smoked sausage), followed by hutspot (carrot, onion, and potato stew) and zuurkool (sauerkraut stew).
