Shine On

The Mongolian new year begins with fireworks over Sukhbaatar Square in Ulaanbaatar and the traditional meal of buuz (steamed dumplings stuffed with mutton and fat). Families clean the ger (the traditional felt tent) from top to bottom, pay off debts, and prepare fresh deel (traditional robes) for the coming year. The buuz is the national dish of Mongolia, and every family makes hundreds by hand in the days before the holiday. The tradition is to eat twelve buuz, one for each month, and to drink airag (fermented mare's milk) if any remains from the previous season.
