The feast of Saint Ignatius is celebrated in Moldova with the tradition of slaughtering the pig (tainul porcului), which is the beginning of the Christmas preparations. The pig is slaughtered before Christmas, and every part of the animal is used: the meat is made into carnati (sausages), the fat is rendered into slanina (pork fat), the feet are made into racituri (jellied meat), and the skin is made into sorici (pork rinds). The tradition is ancient, and the slaughtering of the pig is a community event: the neighbors come to help, and the work is followed by a feast of fresh pork, mamaliga, and wine. The day is not for the faint of heart, but it is one of the most authentic Moldovan traditions.
