The date harvest in the oases of the Adrar plateau : Atar, Terjit, and Mhaireth : is a time of celebration and hard work. The date palm (Phoenix dactylifera) is the tree of life in the Sahara, providing food, shade, building material, and fuel. The best Mauritanian dates are the tiwar variety, small and dark with a caramel sweetness, and they are harvested by men who climb the palms using rope harnesses. In Terjit oasis : a lush palm grove set in a narrow gorge of red rock, where a cool spring feeds a stream that runs between the date palms : the harvest is celebrated with music, storytelling, and the preparation of taguella (flatbread) baked in the sand.
