Mawsim al-Maqbuda
Maqbuda is a Libyan dish of lamb offal (liver, heart, and kidneys) cooked with onions, tomatoes, and spices, and served with bread or rice. The dish is a specialty of the eastern region (Cyrenaica), and it is served at weddings, Eid, and every important gathering. The preparation is a communal event: the men slaughter the sheep, the women clean and cook the offal, and the children play around the fire.
