The Japan Sake and Shochu Makers Association designated October 1st as Sake Day, because the new sake is brewed starting in the autumn. The sake brewing season begins when the weather cools, and the master brewer (toji) oversees the process from October to March. The toji is a craftsman, the yeast is a living thing, and the fermentation is a conversation between the two.
