Seasonal. The moment the first white Spargel appears at the Markt, every restaurant in Germany replaces its entire menu. Spargelsuppe, Spargel mit Schinken, Spargel mit Hollandaise, Spargel mit Kartoffeln, Spargel with everything. The white asparagus from Schrobenhausen is prized like truffle. The peeling is done with a special knife. The water is saved for soup. The season lasts until Johannistag, June 24, and not one day longer.

Seasonal. From mid-April to June 24, every restaurant in Germany offers a Spargelkarte. Spargelcremesuppe. Gebratener Spargel. Spargelrisotto. Spargel mit Schinken. Spargel mit Lachs. Spargel mit Krabben. Spargel mit dreierlei Sossen. The white asparagus peels are saved for soup. The peeling is done with a Spargelschaeler, a special peeler. The water is saved for Spargelsud. The Spargel is not optional during Spargel season. The Spargel is mandatory.
