Churchkhelis Dge
Proposed. Walnuts strung on a thread, dipped repeatedly in thickened grape juice, hung to dry. The result looks like a candle, tastes like a meal, and keeps for months. Churchkhela is the original energy bar: portable, durable, and made from ingredients you can pronounce. Every autumn, every kitchen in Kakheti is covered in hanging churchkhela. The children steal them before they dry. The parents pretend not to notice.

The grape harvest in Kakheti. Every September, families gather to pick grapes, press them with their feet, and pour the juice into qvevri buried in the ground. The harvest is not work. The harvest is celebration. The wine made this month will be ready next year. The wine made last year is opened this weekend. The cycle is eternal. Georgia has been doing this for eight thousand years.

The grapes have been picked. Now they must be pressed. In Kakheti, this means bare feet in a wooden vat, stomping grapes, the juice running between your toes, the smell of fresh grape must filling the air. The children stomp. The grandparents watch.
