The day Georgia declared independence in 1918. The streets of Tbilisi fill with military parades, folk dancing, and food stalls selling khachapuri, khinkali, and mtsvadi. The flag, white with five red crosses, flies from every balcony. The music plays from every speaker. The khachapuri lines are long but nobody complains. Independence, like khachapuri, requires patience.
