Caterpillars, the delicacy that every Congolese person abroad craves and every foreigner refuses to try until they try it. Fried with onions and tomatoes, makobo are crunchy, savory, and surprisingly delicious. The caterpillar season is short, and when makobo appear in the market, they sell out before noon.
