Cassava leaf stew, the national dish, the meal every Congolese person on earth misses when they are away. Pondu is cooked with palm oil, onions, tomatoes, and whatever protein is available. It is not fancy, it is not supposed to be. It is home on a plate. If your mama did not make pondu this Sunday, was it even Sunday?
