Moambe sauce, made from palm nuts, is the queen of Congolese cuisine. Chicken moambe, the national dish declared by presidential decree, is chicken simmered in this rich, nutty, red sauce until it falls off the bone. If pondu is everyday, moambe is celebration. Every Congolese cook has a moambe recipe and every moambe recipe is the best.
