Mokolo ya Mikate

The deep-fried dough balls sold at every intersection in Kinshasa, golden and puffy and dusted with sugar. Mikate are the Congolese donut, the morning ritual, the thing you buy on your way to work and eat standing up. Three mikate and a cup of tea and you can face anything the city throws at you.
