The real celebration is the 24th, not the 25th. The whole family gathers at midnight for vitel tone, pan dulce, and sidra. The heat is brutal, the fan is on high, and someone always sets off fireworks in the street. At midnight, the toast happens and kids run around with globo lanterns.

The most important evening in Denmark. The family gathers. The duck or the pork is served. The brown sauce, the red cabbage, the caramelized potatoes. Then the risalamande, the cold rice pudding with warm cherry sauce, and the whole almond hidden inside. Whoever finds the almond wins a prize. The almond is always found. The prize is always small. Then the tree is circled, hands held, and Christmas songs are sung. The presents are opened. The candles burn low.
