Jour du Mpeke

Smoked fish, the silent partner on every Congolese plate. Mpeke is dried over a wood fire until it is stiff, fragrant, and capable of flavoring an entire pot of sauce with just one piece. You crumble it into pondu, you lay it beside fufu, you snack on it with makemba. Every market in Brazzaville sells it and every kitchen stores it.
