Jour du Maboke
Fish wrapped in marantaceae leaves and steamed or grilled over charcoal. The leaves give the fish a flavor that no aluminum foil can replicate. Every river community has its own maboke technique, every fisherman has his own leaf source, and every Congolese person knows that the best maboke is the one someone else prepared while you watched the river.
