Jour du Vin de Palme

The sap of the palm tree, collected at dawn, drunk before it ferments too far. Vin de palme tastes like the forest decided to become a drink. Sweet at first, sharp later, and capable of making a quiet afternoon turn into a singing afternoon. Every Congolese village has a palm wine tapper who climbs the tree at 4 AM so others can climb into happiness by noon.
