Jour du Fufu

The cassava paste that holds every Congolese meal together. You eat it with your right hand only. Pinch, dip, swallow. No chewing, no left hand, no rushing. Every child learns the technique before they learn to read, and every foreigner gets it wrong on the first try. Fufu is not food. Fufu is the mechanism by which sauce enters the body.
