French bread, baguette, the staple that colonialism left behind and that Congo made its own. Every morning in Brazzaville, the boulangeries produce baguettes that disappear by 8 AM. Pain beurre for breakfast, pain pondu for lunch, pain with everything. The baguette is not French anymore. The baguette is Congolese. It just happens to be shaped like a stick.
