Plantain in all its forms. Fried until golden and caramelized. Boiled and served with salt. Roasted over charcoal until the skin blisters. Mashed into a dense cake. Every Congolese person has a preferred preparation and every preparation has a specific sauce that must accompany it. The makemba is not a side dish. The makemba is the co-star.
