Every Colombian has a strong opinion about empanada sauce. Some want aji, some want salsa de pineapple, some want both, and the person who eats an empanada without sauce is regarded with deep suspicion. The crust should shatter, the filling should be hot enough to burn the roof of your mouth, and you should eat at least three before admitting you are full.
