Xiao (Crayfish) Season
When the temperature rises, the crayfish stalls appear on every corner in cities like Nanjing, Wuhan, and Shanghai. Giant woks of crayfish cooked in mala (numbing spicy) sauce, eaten with bare hands, washed down with cold beer. The shell piles up and the conversation flows. Chinese crayfish culture is a social event, not a meal.
