The mai suya sets up his grill after dark and the smell of spiced beef skewers pulls you from blocks away. You stand in the dust, swap stories, and eat suya with raw onion and pepper until your fingers are greasy and your mouth is on fire. No proper Cameroonian goes home without stopping at the mai suya's corner.
