Ekwang Day

The most labor-intensive dish in the Cameroonian kitchen. Grated cocoyam wrapped around fresh shrimp and tied into little parcels, then slow-cooked in a rich palm nut sauce. Making ekwang takes half a day and a whole family. The woman who can tie the parcels fast enough is respected more than any degree holder.
