Ndole Day

The national dish, or at least one of them, depending on who is arguing. Bitterleaf stewed with groundnuts, shrimp, and meat, served with plantain or miondo. The washing of the bitterleaf takes hours and you either do it properly or you suffer the consequences. A properly made Ndole will make a grown person close their eyes on the first bite.
