Fresh rice noodles topped with green curry made from lemongrass, turmeric, and kaffir lime. Women carry them on baskets balanced on their heads every morning, calling out "num banh chok" in a voice that carries down the street. The green curry version is the one that matters and anyone who tells you otherwise is from a different province.
