Tapioca
In the Northeast, tapioca is breakfast, lunch, and a way of life. The cassava starch hits the hot pan and fuses into a crepe in seconds, stuffed with coconut, queijo coalho, or carne de sol. The beiju sold in markets is tapioca's sweeter cousin and every Nordestino grew up watching it pressed between banana leaves.
