Seswaa Day
The national dish and the hill every Motswana will die on. Beef boiled for hours until it falls apart, then pounded with a wooden pestle until it shreds into pure meat seasoned with nothing but salt and patience. The best seswaa is always made at a funeral or wedding because those cooks have nothing but time and a whole cow.
