Momos, those steamed dumplings filled with pork or cheese, are Tibetan in origin but thoroughly adopted by Bhutan. Every street corner in Thimphu has a momo stall, and every Bhutanese person has a strong opinion about which one is best. The dipping sauce matters as much as the momo itself. Ema datshi sauce or simple chili sauce, this debate has ended friendships.
