Fresh palm wine, tapped that morning from a palm tree and served in a calabash before noon. The sweetness fades by afternoon, so you drink it early or you miss it. In villages across southern Benin, the palm wine tapper climbs his tree before dawn and by mid-morning, every compound has a full gourd ready for guests.
