Dates vary. The last week before Lent and the excuse to eat as many blini as humanly possible. Butter, sour cream, jam, caviar, meat, and cheese all rolled into thin pancakes that disappear faster than they are made. The straw effigy of winter gets burned and everyone watches because winter in Belarus is long and its departure deserves ceremony.
