The staple side that shows up on every Bahamian plate, made with pigeon peas, long grain rice, salt pork, and a tomato-based broth that has to cook just right or you hear about it. It is the foundation of Sunday dinner, the bed for your stew chicken, the thing you eat plain at midnight standing over the stove.
