That golden, beaten-flat, deep-fried conch that crunches when you bite it and tastes like the sea and flour and pepper all at once. Every island has a fry spot that does it best, and every Bahamian has a strong opinion about whether the batter should have pepper sauce in it or not. You eat it with a cold Kalik and a squeeze of lime and call it a perfect afternoon.
